Food Works Chef Talk 2018, April 19th


We're hosting another Chef Talk with Food Works next Thursday (4/19) in our Serpent Room! This time, James Beard-nominated chef Rob Connoley will be discussing incorporating foraged food into the kitchen. It will be an evening for foodies interested in foraged food with a special silent auction of one-of-a-kind food experiences in Southern Illinois! Chef Rob Connoley is the owner of Squatters Cafe in St. Louis and the forthcoming restaurant Bulrush. Chef Connoley is a James Beard-nominated chef for his work at the Curious Kumquat in Silver City, New Mexico, and author of Acorns and Cattails: A Modern Foraging Cookbook of Forest, Farm, and Field. He will discuss his extensive foraging experience and how he has used acorns in food, preparing them in three dishes:

Acorn financiers with dotomoruk (Korean acorn jelly)

Thai-seasoned acorn croquettes

Acorn tortilla tacos

Each dish will be paired with three of our beers, including one made with fermented acorns--a process that takes more than a year before they are added to a stein beer. Chef Connoley will also be available to discuss and sign copies of his book. Chef Talk is a unique tasting and discussion event with some of the brightest minds in food in the Midwest, hosted by Food Works and Scratch Brewing Company. And be ready to duel it out that evening at a silent auction for four incredible items for Southern Illinois foodies!

10 weeks of fresh, local, certified organic vegetables delivered to the Co-op or to your door in Carbondale, Alto Pass, or Cobden from All Season Farm. Each delivery will contain your choice of a mix of greens, lettuces, tomatoes, herbs, strawberries, beans, spinach, cucs, or any other of the many veggies or fruit that are in season. You schedule 10 delivery dates of your choice anytime between April and September.

Home Garden Consultation

Master Gardener Karen Schauwecker will provide you with two in-home garden consultations. Karen has experience managing the LOGIC garden at SIU, teaching nutrition education at an elementary school garden, and has workedas the assistant manager at a university farm in Tennessee. Topics vary by need but could include: site preparation, starting your own seeds, growing by the seasons, planting calendars, soil amendments, and general planning. Karen is looking forward to helping you create the garden you’ve always dreamed of.

Herbal Luncheon and Farm Tour for Four

Join Marjorie Sawicki for a tour of Acorn Ridge Farm where asparagus, fruit trees, berries, flowers, and herbs have been planted for future markets. Marjorie moved to her little log cabin last May. The farm is transforming from grassland and woods to a small permaculture farm. Using her farm-to-table experience with children and adults she will plan an herbal luncheon for your group. Fresh ingredients and the flavors of Southern Illinois grown foods will be the highlight. You'll take home recipes for the dishes prepared for your meal. You'll want to schedule this event during the peak harvest for seasonal foods! Bon Appetit!

Weekend Cabin Rental On the Southern Illinois Wine Trail

Plan your 2-night get away in this beautiful cabin in the woods on the southern end of Southern Illinois's wine trail. Located along spring-fed Hutchins Creek, the 2-room cabin can sleep 4-6 adults and offers all amenities indoors as well as multiple outdoor living spaces, a fire pit, decks, and a screened-in porch.All proceeds benefit Food Works, a non-profit organization dedicated to creating a sustainable food economy in Southern Illinois. $25 General Admission
