Cedar Oak


The newest bottle at the brewery is Cedar Oak and it is available starting today!

A farmhouse beer mashed through a bed of eastern red cedar branches foraged from the woods around the brewery, boiled with oak bark from our property, and fermented with our wild house mixed culture, this project has been a reoccurring Scratch beer on our tap list and we are pleased to be able to offer it to you in bottles. We previously had a version of this beer having been aged in a barrel with native, wild yeast and this beer was not barrel-aged, though still possesses a nice oak complement to the cedar ever-present in its use as a mash filter.

Cedar is an ingredient that we frequently employ into our mash routine rather than during the boil, as the filtered wort picks up subtle, yet noticeable flavor and aroma from the branches.

This bottle-conditioned beer showcases prominent juniper-like and earthy characteristics with subtle flavors reminiscent of vanilla and a light, pleasant finish. It comes in at 5.2% ABV in 750ml bottles, is ready for your enjoyment now or can be aged in your cellar, and is available for $15 each. To go along with this release, we will also have a barrel-aged blueberry sour available on tap and in growlers to go! This beer is a no-hop sour beer aged in barrels and re-fermented on local blueberries, coming in at 5.4% ABV.

Bottles are available first-come, first-served and there are no reservations.
